So, I’m not a huge banana fan….ok, I’m not a banana fan at all, but my husband and son like them. We were gone for six days last week and when got home we had some ripe bananas. Usually I make banana bread with them, but I decided to try something new today. Banana pudding! I found a recipe online and then did some improvising since I didn’t have all the ingredients. This is what I came up with.
Banana Pudding Ingredients:
1 (8 oz.) package of cream cheese, softened
1 (14 oz.) can of sweetened condensed milk
1 (5 oz.) package of Cook & Serve Vanilla Pudding
3 ripe bananas (you could use 2-4, depending on how strong you wanted the banana flavor to be)
3 c. cold milk
1 t. vanilla extract
Whipped topping
Vanilla wafers
Whip the cream cheese with a mixer until light and fluffy. Add the sweetened, condensed milk and pudding and mix well. Then add the bananas and incorporate well. Add the milk and vanilla. The mixture will be lumpy because of the bananas. Pour the mixture into a large saucepan and heat over medium heat until boiling, stirring constantly. You can either serve it warm or chill it. Mixture will become thicker as it cools. Serve with whipped topping and vanilla wafers. Enjoy!
Oh! I like this recipe. I love the addition of cream cheese. I’ll have to try it.
