Jambalaya

March 28, 2011 By Sara

Kevin made this the first time that I came to visit him after we met.  It was so good!  And it’s so easy to make!
Ingredients:
2-3 boxes of Zatarain’s New Orleans Style Jambalaya Mix (depending on how many you are feeding!)
Fresh mushrooms
Choice of meat/seafood:
1 lb. hamburger, browned
1 lb. cooked shrimp
Ham, cooked and cubed
Crawfish
Scallops
Andouille sausage
Chicken, cooked and cubed
Today, we made the jambalaya with hamburger, shrimp, ham and crawfish because that is what we had  in our freezer!
We used two boxes of jambalaya mix today since it was
only Kevin and I eating it.  We have plenty of leftovers
to eat this week!

Quarter whole fresh mushrooms and set aside.

Brown the hamburger.

In a large pot add the water and rice/seasoning as directed
on the Zatarain’s box.  Bring to a boil.

Chop up the cooked ham.

Cooked shrimp found in the frozen seafood
freezer along with the crawfish.

Once the rice comes to a boil, add the mushrooms and
meats to it.  Turn the heat down to low and simmer
for 25-30 minutes or until most of the liquid is
absorbed and the rice is done.

The jambalaya is great by itself, but if you want to spice
it up a bit, add a few drops of hot sauce to it.  Enjoy!
