So I just made this up with my sister, Megan’s help on Sunday night. And I have to say it turned out great! I had leftover tomatoes from canning that afternoon, a single green pepper from my garden, half of an onion that I needed to use and a partial package of Swiss cheese. So this is what I/we came up with.
Ingredients:
A piece of halibut (I’m guessing it was at least a full pound.)
10 Roma tomatoes, peeled
1/2 c. Swiss cheese, shredded
Salt, to taste
Pepper, to taste
2 Tbls Thyme
3 Tbls Butter
1 Green pepper, diced
1/2 Onion, diced
1 tsp. Garlic powder (or you can use fresh minced garlic if you have it…I was out)
Mozzarella cheese, sliced
Directions:
Preheat oven to 400 degrees. Then place the peeled tomatoes in a large mixing bowl. Smash them with a fork and add the Swiss cheese, salt, pepper and thyme to the bowl. Mix well.
Then in a small skillet, melt the butter and sauté the green pepper and onion with the garlic powder. Cook it for a few minutes until the green peppers and onions are starting to soften. Then mix it in with the tomato mixture.
Lightly spray an 8×8 pan with cooking spray and place the halibut in the pan. My halibut was so thick that I cut it into 4 pieces so it would cook faster and more thoroughly.
Pour the tomato mixture over the top and pop it into the oven for 20-30 minutes (depending on the thickness of the halibut). When it is almost done, lay the sliced Mozzarella cheese on top and cook until it’s melted and the fish is cook all the way through.
You could eat this with some pasta or with a few sides. We ate it with some new potatoes that had olive oil, garlic and some salt and pepper and cooked carrots. Either way would be delicious! Enjoy!
