Caper Lemon Halibut with Rice and Carrots

About 5pm I was starting to think about what to make for dinner.  I thought of what we had in our freezer and I decided to start with halibut and carrots.  I googled halibut recipes, just to try something new.  I came across a Capers and Halibut recipe and I saw that I had all the ingredients necessary to make it.  I also got some rice from the cupboard to go along with it.  It turned out great!  I made some adjustments to the original recipe which are below.  This is really easy to make too.  The rice takes about 25 minutes and while that is cooking you can cook the carrots and halibut.  Easy and delicious make the best recipes!  
Ingredients for Side Dishes:
Long grain white rice
Carrots
Olive oil 
Salt & Pepper
Ingredients for Halibut:
2 tablespoons olive oil
Halibut steaks
1 cup white wine
3 teaspoons chopped garlic
1/2 cup butter
6 tablespoons of capers, including liquid
2 tablespoons lemon juice
Directions:
Follow the directions on the back of the rice package.  Below is the brand of rice that I use.  I followed the directions exactly and included the salt and butter that are optional.  This takes about 25 minutes to make.

Once you get the rice going, heat the olive oil in a large pan over medium high heat.  Fry the halibut steaks on all sides until nicely browned.

Remove from pan and set aside.

Pour the white wine in the pan and scrape the browned bits from the bottom of the pan.

Let the wine reduce to about half, then stir in the garlic, butter and capers.  Season with salt and pepper and let simmer for a minute or two to blend the flavors.

Return the steaks to the pan and coat them with sauce.  Add the lemon juice to the pan and stir to mix well. 

Cook until the fish flakes easily.

Meanwhile, heat about two tablespoons of olive oil in another pan over medium high heat.  Once the outsides are slightly browned, reduce heat to low and cook the carrots until tender.  Season with salt and pepper to taste.

Once the rice is done, fluff it with a fork.

If you time it just right, it should all be done about the same time!

Serve the halibut over the rice and drizzle some of the liquid over top.  Enjoy!
