I saw this recipe somewhere the other day, but can’t seem to find where it was. I thought for sure that I pinned it on my Breakfast board on Pinterest, but it’s not there.
Anyways, it’s super easy. All I did was core, peel and slice an apple into about six slices. (You can do them thinner if you want, but it was only HD and I eating pancakes that day.) I then whipped up some pancake mix (I like Aunt Jemima’s Original Pancake and Waffle Mix) while the griddle was heating up to 375 degrees.
Next, grease the griddle and then lay the apple rings down on it. Then pour about 1/4 cup of pancake mix over the top of each apple ring. Grill the pancakes just like you normally would.

Top with your favorite butter and syrup and enjoy! Nice and easy, but a different twist on your normal, everyday pancakes!

looks yummy! how long did you cook the apple rings before you put the pancake mix on them?
I basically just put them on the griddle and then started pouring the batter over the top. They weren’t crunchy, but they definitely weren’t mushy either! I liked the texture with the soft pancake! But you could probably cook them on both sides a little bit if you wanted as long as they didn’t’ get too brown! 🙂
