Slow Cooker Roast with Vegetables and Gravy

I love using my crock pot and wish I used it more often.  It’s so easy to just through a few things in and walk away and a few hours later you have an entire meal all ready!
One of my favorite things to make in the crock pot is a roast with vegetables.  The other day I decided to try a new spin on it that I had seen on Pinterest.  It was called Mississippi Roast.
I like to put vegetable in with my roast and I changed a few ingredients.  Here’s how I made it!
Slow Cooker Roast with Vegetables and Gravy (Printable Recipe)
Ingredients:
Pork or Beef Roast of your choice, thawed
4-5 potatoes, cut in bite-sized chunks
1 large onion, cut in large chunks
Small package of baby carrots or 4-5 large carrots cut into sticks
2 tablespoons of Au Jus Base or 1 package of Au Jus Gravy
1 package of Hidden Valley Ranch
1 stick of butter
Directions:
Place thawed roast in crock pot (can use a frozen one but will need to add a few hours of cooking time).  Smear the au jus base on top of the roast (or pour package of au jus gravy onto the roast).
Next pour the package of Hidden Valley Ranch dressing onto of the roast.
Place the potatoes, onions and carrots on top of and around the roast.

Add a stick of butter to the top of everything.

Since my roast was completely thawed, I cooked it on high for 4 hours.  If you had more time, you could also cook it on low for 7-8 hours.  Each roast is going to very on the amount of time it takes to cook.

Once the roast is cooked, remove it and let it rest on a plate.

I used the juice left in the crock pot to make a gravy by heating the gravy in a saucepan.  In a measuring cup, I whisked a few tablespoons of cornstarch with some cold water.  I slowly added this to the boiling juices.  Stir continuously.  Boil for a few minutes until the gravy reaches your desired consistency.

Kevin and I decided that this was the best roast that we had ever had.  Can’t wait to make it again!  Enjoy!
