Mommy Monday: Busy Weekend and Birthday Cake

Happy Monday morning!  We had a good weekend, just not enough time to get everything done (story of my life)!  Kevin was getting the planter ready to go as it is now dry enough and warm enough to get in the field.  We went out for dinner and to Jason Aldean’s concert with friends on Saturday night.  I cleaned the house, did some yard work (not enough though) and made Kevin a birthday cake.  (Today is his birthday!)

When I asked HD what kind of cake he wanted to make for daddy, he said a blue one.  Well, I didn’t really want to have a bunch of blue frosting (didn’t want everyone to look like a smurf), so I asked our friend Peggy what she would suggest making since she always makes fabulous cakes and she recommended a layered cake with blueberries and blackberries.  So I started searching online for layer cakes with blackberries and came across this Blackberry and White Chocolate Layer Cake from Maria del Mar Sacasa on Serious Eats.  Kevin likes white chocolate and blackberries and it looked scrumptious, so I decided to give it a try.  It’s actually a lemon cake.  In between the layers are blackberry preserves and frosting.  Then it’s covered in more frosting.  Next I placed vanilla rolled wafer cookies around the outside, painted them with white chocolate and topped the whole thing with a bunch of blackberries.  YUM!

This was my first layer cake that I have ever made and also my first time using cake flour.  There were quite a few steps, but it turned out fantastic!  I got good reviews from my brother-in-law, Jim, so I was happy with that!

Note:  We did not eat all of this cake on Sunday, so I put it in the refrigerator and we ate some more over the next few days.  It’s definitely best the very first day!  Just an FYI!  The cake starts absorbing all the blackberry preserves and the frosting gets really firm and the wafer cookies start getting soggy.  It still takes good, just not as good as the day that I made it!
