Bacon Cheese Stuffed Cheeseburgers
(Makes 6 burgers)
Ingredients
6 strips of bacon, cut into small pieces
1/2 medium white onion, diced
2 pounds of ground beef
3 cups of cheddar cheese, shredded
3/4 teaspoon garlic salt
1/4 teaspoon black pepper
1 tablespoon Worcestershire sauce
Dash of liquid smoke
Directions
Heat grill to 350 degrees.
Cook bacon over medium-high heat for just a few minutes in a skillet on the stove. You want it cooked, but not crispy.
When it is cooked, place bacon on a paper towel on a plate to drain. Pour out most of the bacon drippings. Leave about a tablespoon of the drippings in the skillet. Place the onions in the skillet and cook over medium heat until soft and translucent.
Remove from heat and set aside.
Place hamburger in a food processor or a large mixing bowl. (I used my brand new Ninja Mega Kitchen System for this step and it worked fabulously! I was a very lucky recipient of this blender/food processor from Ninja and have used it for quite a few things in the past few weeks. So much so that it stays sitting on my kitchen counter right now!)
MIx for a few seconds and then add the onions, garlic salt, pepper, Worcestershire sauce and a dash of liquid smoke. Mix thoroughly.
Divide hamburger mixture into 12 portions. Form six of them into flat patties about 1/2 inch thick. Place the patties on a parchment paper lined tray.
Top each of the patties with the bacon and about 1/4 cup of shredded cheese.
Form the remaining hamburger portions into patties and place on top of the bacon and cheese. Pinch the bottom and top patties together around the edges. (You want to make sure they are sealed completely so the cheese doesn’t ooze out!)
Once the burgers are sealed, press down on each one to make sure they are nice and flat.
Place on a 350 degree grill for about 8-10 minutes per side. (Each grill will cook differently, so keep a close eye on them!) The recommended internal temperature for a cooked hamburger is 160 degrees.
When they are about a minute from being done, place the remaining shredded cheese on top of each burger and let it melt completely.
