Family Favorites-Holiday Side Dishes: Holiday Potato Casserole

  • 3 pounds potatoes, peeled and quartered
  • ½ cup butter
  • 6 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese, divided
  • 1 (2 ounces) jar diced pimento, drained
  • 1 small green pepper, finely chopped
  • 1 bunch green onions, finely chopped
  • ½ cup grated Parmesan cheese
  • ¼ cup milk
  • 1 teaspoon salt
  1. Cook potatoes in boiling water, covered for 15 minutes or until tender. Drain.
  2. Place potatoes in a large mixing bowl and add butter and cream cheese, beat with an electric mixer at medium speed until smooth.
  3. Stir in ½ cup cheddar cheese and next six ingredients. Spoon into a lighted greased 11x7 baking dish. Cover and chill, if desired.
  4. Remove casserole from frig and let stand at room temperature for 30 minutes.
  5. Bake at 350 degrees for 40 minutes or until thoroughly heated.
  6. Sprinkle with remaining ½ cup cheese; bake 5 minutes or until cheese melts.
  7. (You can bake immediately instead of chilling. Bake time may be less that 40 minutes.)
