Country Style Green Beans

  • 8 cups of fresh green beans, washed and cut into bite-size pieces
  • 5 slices of thick cut bacon
  • ½ onion, diced
  • 2 cups of chicken broth
  • 2 cups of water (approximately)
  • 2 tablespoons of sugar, or more to taste
  • Salt and pepper to taste
  1. In a large pot, begin by frying the bacon. About half way through, add the diced onion. Cook until the onion is tender and the bacon is cooked (don't let it get too crispy).
  2. Remove the bacon and onion from the pot and drain most of the grease. Put the bacon and onion back in the pot and add the green beans, chicken stock, and enough water to just cover the beans. At this time I add the sugar also. Cook over low for 1-1.5 hours. You want most of the liquid to cook out. The green beans will be come very tender.
  3. I would taste test part way through and add your pepper and salt if it's needed. At this point I added a little more sugar to sweeten it up a little more. Or my husband thinks that honey would be good too!
  4. After at least an hour, when the liquid has mostly cooked out, serve the green beans hot. Enjoy!
