Hello!  Can you believe that it’s the holiday season already?  My family has already been making both Thanksgiving and Christmas plans.  Crazy, busy time of the year, but it’s so much fun to spend it will all of our family!

Starting today and going through next Friday I’m going to be sharing with you 10 of my Family Favorite Holiday Side Dishes.  These are perfect to make for a crowd during both Thanksgiving and Christmastime. They are recipes that we make all the time for the holidays, some are from Kevin’s side, some are from my side, and a few are my own version of side dish recipes.  Whenever we get together for both Thanksgiving and Christmas, there are always certain foods that we make every year.

Today’s recipe is for baked corn.  This is a family favorite from the Ross side of the family.  They have it for every Thanksgiving and it is definitely a crowd-pleaser.  AND it’s really easy to make!  The recipe is below!

Another item I’m going to be sharing with you is the Thankful 4 Ag campaign that begins on Monday, November 10th.  I am teaming up with Bayer CropScience who is partnering with Feeding America to help bring awareness and raise money for people and families who struggle with hunger.

For many people, holiday traditions revolve around the food that brings families and generations together.  However, in 2013, 49 million people (16 million of those were children) in the United States lived in food insecure households, with 1 in 6 people facing hunger issues.  So starting on Monday, November 10th until Thanksgiving, every time someone goes to the Thankful 4 Ag website and creates a digital meal with three of his or her favorite Thanksgiving dishes, Bayer will donate $1 (10 meals) to Feeding America.

Please join the cause to help raise money for families across the United States to enjoy a warm meal this holiday season.

Baked Corn

Prep time:  10 mins
Cook time:  60 mins
Total time:  1 hour 10 mins
 
Ingredients
  • 2 cans cream style corn
  • 4 eggs
  • 4 tablespoons sugar
  • 1 teaspoon salt
  • Couple dashes of pepper
  • 1½ cup saltine crackers (1 sleeve), crushed
  • 1½ cup milk
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all the ingredients together in a large bowl.
  3. Pour them into a buttered 9x13 baking dish.
  4. Bake at 350 degrees for 50-60 minutes, or until corn is completely set in the middle.
