Family Favorites-Holiday Side Dishes: Sweet Potato Casserole

  • 6 pounds sweet potatoes or yams, peeled and diced
  • ½ cup maple syrup
  • ¼ cup heavy cream
  • ¼ cup butter, softened
  • 1 egg, beaten
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Topping:
  • ¼ cup butter
  • ¼ cup packed light brown sugar
  • ½ cup pecans, chopped
  • 1 tablespoon heavy cream
  1. Preheat oven to 350 degrees. Grease baking pan.
  2. Cooked the sweet potatoes until fork tender. Drain.
  3. To prepare the potatoes, combine potatoes, syrup, heavy cream, butter, egg, salt, and pepper in a large mixing bowl. Using a mixer at low speed, beat until blended. Increase speed to medium and beat until smooth.
  4. Spoon mixture into prepared pan.
  5. To prepare topping, melt butter and stir in the brown sugar, pecans, and cream.
  6. Spread evenly over top of the sweet potatoes.
  7. Bake uncovered for 50 minutes or until slightly firm on top.
